Spiced Creamy Almond Chicken Drumsticks (or Thighs)

Ingredients

  • 1 cup Natural Greek yoghurt
  • 100g (1 cup) LUCKY ALMOND MEAL
  • 5 cm piece fresh ginger, peeled and finely grated
  • 2 garlic cloves, finely chopped
  • 1 teaspoon ground cumin
  • ½ teaspoon garam masala
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cardamom
  • ¼ teaspoon cayenne
  • ¼ teaspoon turmeric
  • 6 chicken drumsticks or 600g thighs
  • 2 tablespoons melted butter

Directions

  • 1. Combine yoghurt, almond meal, ginger, garlic and spices in a large bowl.
  • 2. Cut three diagonal slits across each drumstick or thigh. Add to yoghurt mixture and toss to coat well in marinade on all sides and rub marinade into slits. Cover with plastic wrap and refrigerate for 8 -24 hours.
  • 3. Remove from refrigerator an hour before cooking and set aside at room temperature. Preheat fan-forced oven to 180°C.
  • 4. Transfer chicken pieces to a large ceramic baking dish. Spread any remaining marinade over the chicken. Drizzle over the melted butter. Roast for 25-30 minutes or until chicken is cooked through and tender.
  • 5. Serve immediately.
  • 6. Serving suggestions: serve with chapatti bread or steamed basmati rice, steamed greens and mango chutney.
