Easy Flourless Orange Cupcakes

Preheat oven to 170°C. Line cupcake tray with paper cases.


  • 2 good sized oranges or 3 smaller ones
  • 2 eggs
  • 215g (1 cup) caster sugar
  • 300g (3 cups) Lucky Almond Meal
  • 200g dark chocolate chips
  • 1½ cups pure icing sugar
  • 1-1½ tablespoons water
  • Food coloring optional
  • Sprinkles, chocolate shavings etc. to decorate


  • 1. Place the oranges in a saucepan and cover water. Bring to the boil over medium heat. Cook for 15 minutes or until tender. Drain. Return to pan and cover with cold water. Bring to the boil and cook for 15 minutes (this will reduce the bitterness of the peel). Drain. Coarsely chop oranges. Remove and discard any pips.
  • 2. Place the oranges in a food processor and process until smooth.
  • 3. Use an electric mixer to beat the eggs and sugar in a bowl. Add the orange, almond meal, dark chocolate chips and gently fold until just combined. Spoon mixture into prepared cupcake paper cases.
  • 4. Bake for 20-30 min or until a skewer inserted into centres comes out clean. Set aside for 15 minutes to cool.
  • 5. Remove cupcakes from tray and decorate.
