Remember to let your guests know that there are pits in the cherries!
Serves 4
150g fresh cherries, stalks discarded
½ tsp salt
Olive oil
½ cup of Lucky Blanched Almonds
100g rocket
1 small clove garlic, crushed
2 tsp balsamic vinegar
Black pepper
120g soft goat’s cheese, crumbled
Preheat oven to 180ºC.

Toss the cherries with the salt and 2 teaspoons of olive oil. Arrange in a single layer in a baking dish and roast for 20 minutes.

Spread the blanched almonds out on a baking sheet and cook for 6-8 minutes, or until golden. Cool on a plate.

Wash, drain and dry the rocket. Whisk the garlic, vinegar, a good grinding of black pepper and 1 tablespoon of olive oil in the base of a salad bowl. Add the rocket to the bowl, toss well.

Add the crumbled goat’s cheese and the almonds.
5.
Lastly, add the cherries and their juices while still warm.
