Almond Choc Crunch Cookies
Makes approximately 30 cookies

4 tbsp butter
½ cup caster sugar
½ cup brown sugar
1 egg (beaten)
1 tsp vanilla essence
1 ¾ cups SR flour (sifted)
2 tbsp Lucky Slivered Almonds
2 tbsp chocolate chips

Preheat oven to 180ºC. Grease biscuit tray

Beat butter until soft and then mix in sugars. Beat until light and fluffy. Add egg, essence and mix well.

Slowly fold flour into mixture, small amounts at a time. The mixture is then ready when it does not stick to the bowl.

Mix in Lucky Slivered Almonds and choc chips. Roll teaspoonfuls of mixture into balls. Flatten but leave enough room for spreading.

Bake for 15 minutes or until they turn a light golden colour. Leave on hot tray for 1 minute, then take off.

 

You can add more or less of Lucky Slivered Almonds or chocolate chips, as your heart so desires.
