Creamy Christmas Fruit Salad

300ml thickened cream
2 tbsp icing sugar
50g Lucky Flaked Almonds
¼ cup  plain yoghurt (natural or vanilla)
½ cup dessicated coconut
1 pkt marshmallows (quartered)
450g crushed pineapple (drained)
3 fresh passionfruits (or ½ punnet chopped strawberries)
extra Lucky Flaked Almonds for decoration
6 parfait glasses

1.

Beat cream and icing sugar until peaks form.

2.

Gently fold in all other ingredients.

3.

Spoon into parfaits and top with Lucky Flaked Almonds. Refrigerate.

 

Will last up to 2 days in fridge.
