1 sheet ready roll sweet shortcrust pastry
Jam (raspberry, blackberry - what ever you prefer)
1 egg
25g butter
25g caster sugar
25g Lucky Almond Meal Lucky Flaked Almonds
Icing sugar
Preheat oven to 170°C in a fan forced oven. Grease 12 small patty pan tray.

Melt butter and mix together with egg, caster sugar and Lucky Almond Meal.

With an egg ring, cut out 10 circles in your ready roll pastry; roll out the remainder to make two more.

Press your 12 circles into your cake tins. Spread a small teaspoon of jam into each one.

Spoon out evenly the almond meal mixture onto the jam. Sprinkle Lucky Flaked Almonds on the top. Bake for 20-25 minutes until golden brown. Allow to cool and dust with icing sugar.
