Orange Almond Cake

2 small oranges (about 360g)
1½ cups Lucky Almond Meal
1 cup caster sugar
6 eggs
1 teaspoon baking powder

 

Orange syrup
½ cup caster sugar
½ cup orange juice


Combine juice and sugar in a small saucepan stir over heat without boiling until the sugar is dissolved. Simmer uncovered, without stirring for about 5 minutes or until slightly thickened.


Preheat oven to 160°C.
Grease a 20cm round cake tin and line base with paper.

Peel one of the oranges and leave peel on other, quarter and take out any seeds and white middle of the orange. Process until smooth.

2. Add the eggs one at a time while processor is still running. Add the sugar then almond meal and baking powder. Keep processing until combined. Pour into cake tin, bake for about 1½ hour.
3. Pour hot syrup over hot cake and leave in tin for 30mins. Turn out on wire rack over a tray.
