Pine Nut and Pumpkin Salad

Lucky Pine Nuts (roasted)
pumpkin (roasted)
spinach leaves
feta cheese
1 tsp wholegrain mustard
1 tsp hot or mild mustard
1 tsp olive oil
salt and pepper
lots of lemon juice, freshly squeezed

Dressing:
Whisk together mustards, salt and pepper, olive oil and lemon juice.


Preheat oven to 200ºC.

Roast pumpkin, cut up and put in a bowl.

Add spinach leaves and feta.

Roast pine nuts and add to salad.
