Plum Cake

150g softened butter
100g plain flour
50g Lucky Almond Meal
150g icing sugar
3 eggs
1teaspoon vanilla essence
1 tablespoon baking powder
1 large tin plums in juice
Extra sugar


Preheat oven to 200°C and grease and line 20cm spring form tin.

Place butter, flour, Lucky Almond Meal, icing sugar, eggs, vanilla and baking powder into food processor and mix until pale and creamy. Spoon into prepared tin.

2. Drain the tin of plums (reserving the juice) and cut the cheeks off the plums. Arrange layer over the cake mixture.
3. Bake in oven for 20 minutes, then sprinkle with the extra sugar and bake for a further 25mins.

 

Meanwhile, boil the plum juice with some sugar until syrupy and when cake has cooled, pierce with skewer several times and spoon/brush cake with lots of the syrup - yum!
