Spiced Peaches with Toasted Almonds

250g pkt dried peaches
2 cups water
1 cinnamon stick
4 cardamom pods, bruised
2cm piece fresh ginger, peeled & bruised
2 strips of lemon peel
1 teaspoon vanilla essence
2 teaspoon honey
½ cup Lucky Flaked Almonds

Place peaches in a small saucepan and cover with water. Add spices, lemon peel, vanilla and honey and bring to boil over a medium heat. Reduce heat and simmer uncovered for 15 -20 minutes, or until syrup thickens. Allow to cool and refrigerate until required.

2. Spread almonds on a baking tray and bake at 150°C for 10 mins, stirring every couple minutes until nuts are golden. Serve fruit sprinkled with Lucky Flaked Almonds and a dollop of yoghurt, or on top of breakfast cereal or porridge.
