BANANA NUT MUFFINS
3 large, very ripe bananas
70g (½ cup) brown sugar
80ml (⅓ cup) light olive oil, plus extra for greasing
1 tsp baking powder
1 tsp bi-carb soda
1 tsp ground cinnamon
200g (1½ cups) wholemeal flour
50g (1 large handful) Lucky Slivered Almonds and Lucky Pine Nuts
- Preheat fan-forced oven to 160ºC. Lightly grease a 12 hole muffin tray with a little oil.
- Peel and mash bananas with a fork. Add sugar, egg and oil and mix well.
- Sift baking powder, bi-carb soda, cinnamon and flour into a bowl. Stir through the Lucky Slivered Almonds and Pine Nuts, then very gently mix in the banana mixture. Do not over-mix. Spoon into prepared muffin tray and bake for 20 minutes. Cool in tray.
A handful of chocolate chips or dried cherries folded through the batter are delicious additions. Try both for an extra special treat.
