FENNEL, ALMOND AND ORANGE SALAD

INGREDIENTS
Ingredients
½ cup LUCKY NATURAL SLICED ALMONDS, toasted
1 bulb fennel, thinly shaved
100g baby rocket, washed
1 orange or blood orange (when in season), peeled, thinly sliced
50g feta, crumbled
Dressing:
2 tablespoons orange juice
2 tablespoons lemon juice
2 tablespoons extra virgin olive oil
1 teaspoon Dijon mustard
DIRECTIONS
- Place almonds in a dry pan and toast over a medium heat for 3 minutes or until golden and aromatic. Set aside.
- Combine fennel, rocket and orange in a bowl.
- Shake dressing ingredients together in a small jar. Drizzle over salad and scatter over feta and toasted almonds.
