HAZELNUT CRUNCH CHOCOLATE MOUSSE

Makes 6

INGREDIENTS

Mousse
300g (2 cups) LUCKY NATURAL CASHEWS, soaked in boiling water for 10 minutes and drained
35g (1/3 cup) dutch-process cocoa powder (not cacao)
10 dates
40ml coconut oil
80ml coconut milk
80ml water
Pinch of sea salt
Maple syrup to taste if you like a sweeter mousse

Hazelnut Crunch
150g (1 cup) LUCKY HAZELNUT KERNELS
60g (¼ cup) caster sugar
1 tbsp butter
Pinch of sea salt

DIRECTIONS

1. Place all mousse ingredients into a high-speed blender and combine until completely smooth, tamping down as needed.

2. Spoon mousse into cups and set aside.

3. In a non-stick frypan, place hazelnut crunch ingredients on low heat, stirring as the butter melts.

4. Once the butter has melted, continue stirring so the sugar melts and coats the nuts for 3-4 minutes.

5. Tip coated nuts onto baking paper to cool completely. Once cold to touch, top mousse and serve.
