NUT AND SEED BISCUITS
Gluten free and packed with “good for you” nuts and seeds.
Makes 18 biscuits
Preparation time – 15 minutes
Baking time – 12 minutes
½ cup (60g) Lucky™ cashew meal
1 cup (120g) Lucky™ Australian almond meal
2 tablespoons chia seeds
1 tablespoon sesame seeds
¼ cup (40g) finely chopped dates or cranberries
¼ cup (35g) Lucky™ toasted sunflower seeds
¼ cup(35g) Lucky™ Australian toasted slivered almonds
Sea salt, for sprinkling
- Preheat oven 180°C (fan forced 160°C). Mix cashew meal, almond meal, chia seeds, sesame seeds, dates and egg with a wooden spoon to form a dough.
- Roll out dough on baking paper until 1cm thick, sprinkle with sunflower seeds or almonds then roll out until 5mm thick. This presses the nut topping into base. Sprinkle with sea salt.
- Cut out circles with a 5cm round cutter. Place on a baking paper lined oven tray. Bake for 10 – 12 minutes. Cool on tray. Store in airtight container for 1 week.
