SPICED MIXED NUTS
Preparation time – 10 minutes
Baking time – 15 minutes
Makes approximately 3 ½ cups
1 egg white
1 tablespoon brown sugar
2 teaspoons sea salt flakes
1 teaspoon ground cumin
1 teaspoon ground smoked paprika
½ teaspoon cayenne pepper or chilli powder
225g (1½ cups) LUCKY NATURAL ALMONDS
100g (1 cup) LUCKY CALIFORNIAN WALNUTS
140g (1 cup) LUCKY MACADAMIAS
75g (½ cup) LUCKY PEPITAS
- Preheat oven to 180°C (160°C fan forced). Line a large baking tray with baking paper.
- Place egg white in a large bowl and whisk until soft peaks form. Whisk in sugar, salt and spices until combined. Add nuts and stir to coat.
- Spread out onto a large oven tray. Bake for 15 minutes, or until golden and toasted.
- Store in an airtight container for 1 week.
Use your favourite spice mixes. You can replace 2½ teaspoons of spices above with Middle eastern spice mix, Peri Peri or Dukkah.
